Ingredients (for 2 bruschettas)
- 2 slices of country bread
- 3 ripe peaches
- 100g of fresh goat cheese
- 1 handful of rocket
- 1 small shallot
- 1 tbsp toasted pine nuts
🍵 Antésite Peach Tea Marinade
- 2 tablespoons of olive oil
- 2 tsp of honey (or brown sugar)
- 2 tbsp of Antésite Peach Tea
- 2 tsp balsamic vinegar
Preparation
- Mix all the marinade ingredients in a bowl
- Toast the pine nuts
- Toast the bread
- Roast the peaches in a pan, then deglaze with the marinade and let it reduce until caramelized.
- Spread the fresh goat cheese on each slice of toast.
- Add a layer of fresh rocket
- Arrange the caramelized peaches
- Scattered with sliced raw shallots and pine nuts
